Uncle Tio's Tortilla Soup

Preparation Instructions: Bring 5-1/2 cups water and 1 tablespoon oil (olive or vegetable) to a boil in a medium-sized pan. Add packaged ingredients and simmer, covered, for 20 minutes. For tortilla garnish, if using fresh tortillas, cut into strips and fry until crisp. To serve, place hot soup in bowl, add fried tortilla strips or crumbled commercial tortilla chips and optional garnishes of chopped fresh cilantro, thinly-sliced lime and shredded chicken.
Serving Suggestions: Serve as a luncheon soup or as a first course for dinner. Warmed flour tortillas are a nice addition, along with a fresh garden salad of lettuce, chopped broccoli, jicama, mild green Anaheim chile peppers, tomatoes, onions and cheese. Top with our
