Scarlet Runners
w/Tiny Pearl Onions

1 lb. Scarlet Runner beans
1 smoked ham hock
1/2 lb. tiny pearl onions, peeled
2 cloves garlic, minced
1/2 tsp. pepper
1/2 tsp. paprika
1/4 cup balsamic vinegar
4 Tbsp. fresh parsley, chopped fine

Rinse & sort beans. Cover with water & soak overnight; OR bring to a boil for 5 minutes, remove from heat, cover & let rest for 1 hour. Drain, rinse & cover beans with water. Add ham hock. Bring to a boil, cover & simmer approximately 1-1/2 hours or until nearly tender. Add the onions, garlic, pepper, paprika & vinegar. Simmer uncovered until beans & onions are tender (approximately 1 hour). Check occasionally to determine if more water is needed. Before serving, add parsley. Serves 6.
