This is a delicious, delicate soup with a real Southwest flavor. We add the corn & beans - all you need to add are the fresh tortillas!
What do you know about the tortilla? Authentic Mexican food is thought to have derived from the Mayan Indians who were nomadic hunter-gatherers occupying the Yucatan area in Southeast Mexico. According to Mayan legend, tortillas were invented by a peasant for his hungry king in ancient times. The first tortillas, which date approximately 10,000 years before Christ, were made of native corn with dried kernel. Tortillas are more popular today in the US than all other ethnic breads, such as bagels & pita bread. Tortillas are made from either corn or wheat and have found their place in our mainstream diet.
Uncle Tio's is our most popular soup, as evidenced by devoted enthusiasts nationwide. Chef Jan, an Uncle Tio addict residing in Florida, was generous enough to share her simple, yet creative variation: "Just add cubed avocado, sour cream, sliced grape tomatoes, and grated cheese."
