Hopi Blue Corn Dumplings

Product Description

When cooked, these dumplings are speckled with blue cornmeal, which delights the eye as well as the taste buds. Stone-ground blue cornmeal has a distinctively different taste than yellow or white cornmeal. Our Native Americans invented the process of stone grinding. We thank our supplier - Silver Creek Mill in Snowflake, Arizona - for the stone-ground blue cornmeal, our main ingredient in this mix.

If time is essential (whose isn't?), you'll find that this mix couldn't be simpler. All you do is add the milk & oil, quickly stir and then spoon onto a simmering gravy. Cover, & within 10 minutes they're ready to eat. When you lift the lid you'll be surprised to find the dumplings have expanded to fill the entire surface of the pot.

If you don't have the time to prepare a dish with a resulting gravy, make a base for the dumplings by using prepared or canned chicken or beef broth. Bring to a boil & thicken slightly with a little cornstarch. Gravy should be on the thin side as the dumplings soak up quite a bit of liquid. Incidentally, men LOVE these dumplings!
