Mix yogurt, whipped cream and finely chopped mint together gently. Spoon 1/2 cup cream mixture in small glass bowls or wine glasses. Spoon 1/2 cup pineapple on top of cream mixture. Top with 2 tablespoons granola. Place a dollop of cream mixture on top of granola. As an optional garnish, top with a fresh mint leaf. Serves 6.
*Canned pineapple chunks may be substituted for fresh pineapple.
