Jalapeno Corn Bread

Preparation Instructions: Preheat oven to 425 degrees. Have milk & eggs at room temperature. Melt 3-4 T. butter or margarine. In mixing bowl, combine & beat 1-1/2 cups buttermilk or yogurt & 2 eggs. Stir in melted butter. Pour bread mix into a medium-sized mixing bowl. Add liquid mixture to dry ingredients. Stir together gently until thoroughly blended. Pour into 5" x 9" loaf pan or 8" cast iron skillet. Bake for 25-30 minutes or until top is golden brown. If using iron skillet, grease skillet & place in 425 degree oven until skillet begins to smoke. Remove skillet from oven & pour in corn bread mixture. Return to oven; baking time will be shorter. If less “hot” is desired, spoon some of the jalapenos from the package before mixing.
