Preparation Instructions: In a medium-sized saucepan, add package contents to 4 cups water (32 oz.), 2 cups milk (16 oz.) and 1 tablespoon oil. Bring close to the boiling point. Simmer, uncovered, for approximately 30 minutes, or until the potatoes and corn are tender. Stir contents occasionally. If a thinner consistency is desired, add a bit more milk. OPTIONAL: When serving, add chopped, fresh cilantro, shredded cheese or cooked pork or chicken.

Serving Suggestions: This soup, along with a salad (try our recipe for a Hearty Southwest Salad) and warmed flour tortillas or our Traditional Indian Fry Bread or our Brew Bread makes a complete meal. Finish with a light dessert such as thinly sliced fresh apples topped with vanilla yogurt, and a spoonful of granola.
