Tear lettuce leaves into bite-sized pieces and place on individual glass plates. Cut avocados and tomatoes into wedges and arrange over lettuce. Garnish with onions and cilantro. Drizzle Lime Dressing over salad. Serve immediately. Serves 4.
Lime Dressing
6 Tbsp. olive or vegetable oil
1 Tbsp. fresh lime juice
1 Tbsp.rice vinegar
1/4 tsp. salt
1/8 tsp. freshly ground black pepper
pinch of sugar
Combine and beat with a wire whisk. Chill.
