Aunt Tia's Cuban Rice

Preparation Instructions: Heat 3 tablespoons oil (olive or vegetable) in heavy saucepan. Add the rice and cook over medium-high heat until rice is opaque and slightly browned, stirring often. Now add 2 cups plus 2 tablespoons hot water and seasoning packet. Bring mixture to a boil, cover saucepan, reduce heat to low and simmer for 20 minutes. (Resist temptation to lift lid). Remove pan from heat, fluff rice with a fork and replace lid. Allow mixture to rest for about 10 minutes before serving.
Serving Suggestions: Aunt Tia's Cuban is an excellent addition to chicken, pork or red meat (see our low-fat recipe for

For a vegetarian meal, round out with our Papago Pinto Beans or Traditional Black Beans and a fresh vegetable salad.
