Anasazi Bean Salad
1/2 cup cooked
Kokopelli's Anasazi Bean* Soup, cold
1/4 cup cooked corn, cold
1/4 cup lightly steamed green beans, cold
1 Tbsp. chopped red & green pepper
1 Tbsp. olive oil
2 tsp. red wine vinegar
1/2 tsp. sugar
Salt & pepper to taste
Gently mix all ingredients together. Chill. Serve on a bed of lettuce or spinach. Garnish with thinly sliced green onions. Serves two.
*Follow preparation instructions for main dish (omit ham hock) OR cook down leftover soup.
