Preparation Instructions for Albondigas Soup: For Meatballs: In mixing bowl, combine packet of meatball seasonings and 1/4 cup water to 1-1/2 pounds of ground sirloin or round steak. Mix well. Shape into 1-inch balls.
To 12 cups of water in heavy 5 qt. saucepan, add packet of broth ingredients (chile pepper optional). Bring to a boil. Add meatballs. Immediately reduce heat to a simmer. Cover saucepan and simmer for 25-30 minutes or until rice is tender and meatballs are cooked through. Serve with lime wedges and chopped, fresh cilantro.
Serving Suggestions: Satisfying and wonderful with warmed
flour tortillas, bolillos (Mexican hard rolls), sopapillas with honey, or fry bread. If serving Albondigas Soup as a first course, round out with Spanish Rice and Avocado-Tomato Salad.
