This is our most popular heirloom bean. Anasazi Beans* are grown for us in southern Colorado. They are red in color with white speckles - with a slightly sweet & nutty flavor. When cooked, these beans are a rich (for lack of a better descriptive color) henna brown.
Though we've added no surprises in our seasoning mix, you'll be pleasantly surprised with the savory results. Serve as a soup or a main dish. It also renders well as a cold salad in warm weather (see our
Anasazi Bean Salad recipe).
Anasazi beans* were grown centuries ago by the Native Americans of the Southwest. These nutritious beans were re-discovered sitting patiently in a small pottery bowl in a dry cave in New Mexico. For hundreds of years the seeds waited for sunlight & moisture to sprout and once again feed the people. Savor the beans from centuries past.
