WOW! This is not your typical corn bread mix. We consider it very gourmet. It's not as sweet as most others - in fact, it has a BIG bite from the diced jalapeno chiles that we've added. And, it has a moistness not to be found in most corn breads. But, if you prefer it dry, simply set the oven 25 degrees cooler & bake 10 minutes longer. It's great with any kind of dried legume dish, soups, chili, posole, stews, & any meal with which bread is served.

Best yet, the jalapenos are packaged separately from the mix so that you can adjust the "heat level" to your individual preference.

The jalapeno's name was derived from its association with the Mexican city of Xalapa in Veracruz, where the chile was grown in ancient times but is no longer found. This little chile, a favorite in California & Texas, is almost 10 times hotter than the mild Anaheim. Most jalapenos rate from 2,000 to 5,000 Scoville Units, placing them at a level of 5 on the Heat Scale.

Jalapenos are probably the most famous chile peppers. They have the distinction of being the only chile smuggled into space on board the Columbia. Their ongoing popularity may be attributed to their unique combination of taste & heat.
